Vegan Quinoa Porridge with Kale, Strawberries, Blueberries and Pear

Begin the day proper with this warming, fruit-packed quinoa porridge – it’s even refined-sugar free.

Components

  • 500ml oat milk, or almond milk
  • 1 pinch salt
  • 185g (1 cup) quinoa, rinsed and drained
  • 2 tbs uncooked maple syrup
  • ½ tsp vanilla extract
  • 2 ripe pears, cored and minimize into skinny wedges
  • 150g (1 cup) combined berries, equivalent to raspberries and blueberries
  • 1 handful curly kale, to garnish, optionally available

Technique

Step 1.
Mix the oat milk and salt in a heavy-based saucepan. Convey to the boil over a average warmth. Stir within the quinoa and return to a mild boil. Scale back warmth to low and simmer, partially coated, for 10-12 minutes, stirring every so often.

Step 2.
